Ingredients
-
1 small butternut squash, peeled, seeded, and diced into small cubes
-
2 tablespoons olive oil
-
2 tablespoons za'atar spice blend
-
Salt and black pepper to taste
-
1 baguette or French bread, sliced into 1/2-inch thick rounds
-
1 cup labneh (strained yogurt)
-
Fresh mint leaves, for garnish (optional)
Directions
Preheat the Oven: Preheat your oven to 375°F (190°C).
Roast the Butternut Squash: In a large mixing bowl, combine the diced butternut squash with olive oil, za'atar, salt, and black pepper. Toss to coat the squash evenly. Spread the seasoned squash cubes on a baking sheet and roast in the preheated oven for about 20-25 minutes, or until they are tender and slightly caramelized. Remove from the oven and let them cool.
Toast the Baguette Slices: While the butternut squash is roasting, place the baguette slices on a baking sheet and toast them in the oven for about 5-7 minutes, or until they are crisp and slightly golden. Remove them from the oven and let them cool.
Assemble the Crostini: Spread a generous dollop of labneh on each toasted baguette slice. Top with the roasted butternut squash cubes.
Garnish: If you like, garnish the crostini with fresh mint leaves for a pop of color and freshness.
Serve: Arrange the Za'atar Roasted Butternut Squash and Labneh Crostini on a serving platter and serve them as a savory and fall-flavored appetizer.
